Founders
Olga Grygier-Siddons
Olga Grygier-Siddons is a former Regional Chief Executive of PwC in Central and Eastern Europe, with over 30 years of international experience in professional services. She is a trusted business advisor and mentor, serves on numerous boards, and is deeply passionate about responsible leadership and personal growth.
Jonathan Siddons
Jonathan Siddons has held international leadership roles across the telecoms, IT and travel sectors. Since 2006, he has worked with CEOs and leadership teams of multinational organisations as a strategy advisor, facilitator and mentor, supporting them through complex transformation and growth.
Together, they created Villa Poranek as a space where business, humanity and creativity could meet.

Our Chef
Sebastian - Head Chef
Sebastian brings over 12 years of culinary experience to Villa Poranek, combining technical expertise with a love for creativity and shared food experiences. As both a chef and culinary trainer, he has designed and delivered around 1,000 culinary events from refined private dining to immersive food workshops.
He thrives on unusual and inspiring settings, whether that means creating a pop-up restaurant in the middle of a shopping centre or serving an elegant meal in an open meadow. His calm, solutions-focused approach ensures that every dining experience feels effortless for guests, no matter how complex it is behind the scenes.
Sebastian's career spans leading Warsaw restaurants, the renowned Food Lab Studio culinary centre, and international internships in Poland, Denmark and Italy. He holds an engineering degree in Gastronomy and Hospitality from the Warsaw University of Life Sciences (SGGW) and is a member of the advisory and employer board at the Institute of Human Nutrition Sciences.
In addition to his culinary work, Sebastian is a familiar presence on film sets, contributing as an actor, hand model and food producer a reflection of his creative eye and deep understanding of how food is experienced visually as well as through taste.
At Villa Poranek, Sebastian leads the kitchen with a philosophy rooted in quality ingredients, thoughtful presentation and food that brings people together around the table.
